While the recipe in the box calls for milk and eggs, these two ingredients can be easily replaced without sacrificing flavor. For eggs, simply choose between banana or apple puree. Replace the milk with any plant-based milk and you'll have Aunt Jemima's vegan-style pancakes. Most of the pancake mix instructions I've seen tell you to combine the mix, milk, eggs and oil (in varying proportions).
Store-bought pancake mixes may be simple, but that's also what makes them great starting points. Better yet, you can still be a little lazy and use a mix as a shortcut to enjoying pancakes, since all the pancake mixes I've used so far are vegan by nature. Simply replace the cow's milk indicated in the pancake recipe with an equal amount of non-dairy milk, such as soy milk or almond milk.
